Choosing a lamb rub
Lamb has a strong flavour of its own, so the best rubs work with it rather than burying it. Start with how you're cooking it and the flavour you're after.
Greek and Mediterranean
The classic for spit-roast lamb, souvlaki and lamb on the rotisserie. Smokey Joes Greek Souvlaki is the blend Smokey Joes use on their own rotisserie meat, and it's just as good on roast potatoes. Pro-Flame Mediterranean Magic brings paprika, garlic and onion with a light citrus note and mild warmth, so it suits cutlets, skewers and a leg on the rotisserie. Smokey Joe's Tuscan is oregano, rosemary, basil, thyme and sage with garlic and lemon zest, and Smokey Joes rate it particularly good on roast lamb.
Moroccan and Indian spice
Warm and aromatic rather than hot. Smokey Joe's Moroccan Rub is built on roasted cumin, coriander, sweet paprika, turmeric and ginger, and it's gluten free and MSG free. Misty Gully Moroccan Seasoning is an easy everyday option for lamb, kofta, chicken and roast veg. For Indian flavours, Smokey Joe's Bombay Bites blends garam masala, smoked paprika, turmeric, fenugreek, cumin and coriander at a gentle 4/10 heat, for lamb kebabs, skewers and curries.
Chimichurri and herb blends
TKC Chimichurri Chubby is a chunky mix of parsley, oregano, garlic, onion and capsicum flakes: add oil and vinegar for a fresh chimichurri to spoon over grilled lamb. Smokey Joe's Chimichurri works as a dry rub or as a marinade. Rum & Que Homegrown uses native New Zealand herbs such as kawakawa, horopito and NZ thyme, and was made with Sunday roast lamb in mind. For something lighter, Smokey Joes Lemon & Herb brings lemon zest, cracked pepper, rosemary, sage, thyme and chives to cutlets and backstrap.
Savoury garlic all-rounders
If you want the lamb to taste like lamb, just bigger, go savoury. Republic Garlic Butter adds garlic, butter and a little oregano and thyme. Lane's White Magic is built on garlic, onion, porcini and buttermilk for umami depth without heat. Pitmaster's Choice All-Purpose is a garlic-forward rub that's great on rotisserie lamb and just about everything else.
Wild game and stronger meats
Hardcore Carnivore Camo from Jess Pryles is made for venison, wild game and lamb: savoury, with black pepper, garlic and hickory smoke rather than sugar, so it won't fight the meat.
Lamb on the spit or rotisserie
For a whole lamb or a leg on the spit, the Greek, Mediterranean and garlic blends are the most popular. Season well ahead so the flavour gets into the meat. Our guides on how to cook a whole lamb on a rotisserie and lamb on the spit from prep to plate walk through the whole cook, and you'll find the gear in our spit roasters range.

Lamb Rub FAQs
What's the best seasoning for lamb?
Garlic, rosemary, oregano and other Mediterranean herbs are the classic pairing. Warm spices like cumin and coriander (Moroccan or Indian style) also work well, as do savoury garlic rubs if you want the lamb's own flavour to lead.
Which rub should I use for spit-roast lamb?
Greek and Mediterranean blends such as Smokey Joes Greek Souvlaki, Smokey Joe's Tuscan or Pro-Flame Mediterranean Magic are the go-to for lamb on the spit, with Republic Garlic Butter or Pitmaster's Choice if you prefer a simple savoury flavour.
Can I use these rubs on game meat?
Yes. Hardcore Carnivore Camo is made for venison and wild game, and the savoury and herb blends here also suit goat and other strong-flavoured meats.
How do I use a chimichurri mix on lamb?
Use it dry as a rub before cooking, or mix it with olive oil and red wine vinegar to make a fresh chimichurri to spoon over the lamb once it's sliced.
Are these lamb rubs gluten free?
Some are, including the Smokey Joes blends. Check each product page for its ingredients and dietary details.
